berry bran muffins

These muffins are one of my favorite breakfasts. They're delicious, low-calorie, low fat and they're packed with fiber, fruit and nuts. Even my boys love them and kids are the toughest food critics!

Berry Bran Muffins

1. Preheat oven to 350 degrees. In a large bowl, combine the following:

1 cup whole wheat flour

1/2 cup all-purpose flour

1 cup regular oats

3/4 cups packed brown sugar

1 tbsp oat bran

2 tsps baking soda

1/4 tsp salt

2. In a smaller bowl, combine the following:

1 cup mashed ripe banana (about 2)

1 large egg

1 cup plain yogurt (I like to use Greek yogurt. I think it just tastes better.)

3. Stir wet ingredients into flour mixture until just moistened.

4. Stir in the following:

1 cup chopped dates

3/4 cups pecans (or walnuts)

2 tbsp ground flaxseed

3/4 cup dried cherries, raspberries, cranberries and blueberries (or any other dried fruit)

5. Spoon mixture into muffin liners so that each is about 3/4 full. Bake for 20 minutes or until toothpick inserted into center of muffin comes out clean.
